Dry Aloo Bhaji
This is a quick side dish, which can be made and eaten separately with two or three vegetables. It is very easy to make and requires very few ingredients. Boil the potatoes and chop them. Heat oil in a pan, temper with cumin and chilli and add the chopped boiled potatoes and fry them crispy on high flame. Add salt, dry mango powder, red chilli powder, coriander powder, cumin powder and black pepper powder and fry well until golden brown.
Lauki Do Pyaza
This healthy vegetable is prepared very quickly. Cut the gourd and potatoes into big pieces. Heat oil and temper it with cumin seeds, whole red chillies, bay leaves, cloves, small and big cardamom, cinnamon. Add gourd and potatoes and fry for two minutes. Add long thinly sliced onions, keep in mind that the amount of onions should be more or double than the amount of potatoes and gourd. Then add garlic, grated ginger and stir. Add dry spices like salt, turmeric, red chilli powder, coriander powder, garam masala powder, vegetable masala etc. Pack the cooker and turn off the gas after one or two whistles. Lobia Curry
Boil the soaked black eyed peas and keep them aside. Add cumin seeds, whole red chillies and bay leaves in oil and fry them. Add garlic, ginger and green chilli paste and cook. Add salt, vegetable masala, coriander powder and red chilli powder and cook till the masala leaves oil. Then add tomato puree and cook. After cooking, add black eyed peas, add some water and cover after stirring well. Serve with green coriander.
